KOSAI

Kosai dai abincine na hausawa wanda kowa tashi yayi yaganshi.
Kayan hadi:
Wake gwan gwani 2
Attarugu da albasa (dai dai yadda kakeso)
Gishiri (dai dai dandano)
Mangyada rabin kwalba
Yadda akeyi
1.Dafarko za'a surfa waken a fidda hancinsa (bawonsa). Sai a wanke arege idan akwai kasa aciki zai fita. Sai a tsane waken dan ba'ason ya jika. 2.Azuba tarugu da albasan a markadasu tare.
3.Idan aka markado sai a zuba masa gishiri a buga sosai, idan yayi kauri sosai sai akara ruwa yayi dai dai kada yayi ruwa sosai. 
4.Sai a saka mai a wuta yayi zafi, sai a fara diban kullin ana soyawa.
Note:
Ba'a son waken kosai ya jika bayan an wanke baya gardi da kyau.
Sirrin kosai mai kyau shine buga waken nan har saiya kara auki yayi sakwalan ma'ana yadawo ba nauyi kaman kumfa, zakiga kinazubashi a mai zai taso. Amma idan  kosai ya kwanta a mai toh bai buguba kokuma yayi ruwa sosai.

Awara (african tofu)

ingredients:
*soya beans
*lemon/tamarind/vinegar
*scotch pepper and onions
*oil
*eggs

 wash your beans and grind it, then add some water and drain in a muslin cloth. then put the drained water in a pot, put it on the fire and wait, untill it starts to boil and foam then add some lemon or vinegar, it will slow down and foam again. keep doing that untill it all curdles and the milky water becomes clear. drain the curdled tofu add your grinded pepper and onion then squize the rest of the water in the muslin cloth and let it rest for some minutes to take shape and firm a little. then cut it to your desired shape. 
whisk your eggs and fry your tofu with it. enjoy it with some sauce or grinded chilli.

Hausa pancake

ingredients:
*flour
*scotch pepper and onion
*seasoning cube
*palm oil or any oil
procedure:
mix your dry ingredients, the flour and the seasoning. Then add your (roughly grinded or chopped) onion and scotch pepper. Add water and mix just as thick as a pancake batter. then heat a little palm oil, when its hot, add your batter in batches and fry them also like pancakes but let the sides to be a little crispy before turning the other sides.
note: palm oil is preferred to get the real #Nigerian flavour. and also cover the fan untill the side is cooked before opening,  it reduce the palm oil smoke. Add oil on the sides before flipping.

idan kika tanadi wadannan kayan hadi. saiki markada ko jajjaga kayan miyan ki, kisaka akwano. kikawo flour kizuba, kisaka maggi da gishiri idan kinada bukata, sai kizuba ruwa dai dai misali kwabin kamar kullin alale. sai ana diba ana soyawa a kasko da manja dan dai dai, idan gefe daya ya soyu sai a juya daya gefen. ana saka manja adan gefe da gefen dan karya kama.

Alura kada acika masa wuta, abarshi ya nuna a hankali, kafin ajuya inba hakaba zaiyi ruwa ruwa maimakon ya tsane ya kuma soyu.

bukhari rice

bukhari rice
Ingredients
*Rice 
*Carrot 
*Peas 
*Potatoes
*Raisins
*Chicken
*Cinnamon
*Bay leaf
*Maggi cubes
*Turmeric
*Cloves
*Black pepper
*Ginger and garlic
*Groundnut oil

Procedure:
*Wash your rice preferrable(basmati) but i used regular rice and it turned out fine.
Strain it and set it aside.
*Marinade your chicken with clove,black pepper,maggi cube,cinnamon and some tumeric, and roast it in your non stick pan
* Feel your potatoes and cut them to your desired shape, add some salt and fry them.
 Now put your pot on fire add some oil, put ginger and garlic paste saute for a minute then add your onions and fry till golden brown.  Add your cinnamon bay leaf and your rice and fry them constantly turning with your spatula for 5mins then add water. 

When the rice is almost done reduce the heat add your carrots, peas, raisins and chicken turn the rice and cover all the meat. Then add your fried potatoes and cover it let it steam for atleast 5minutes or more and then its done.

miyar lawashi (spring onion soup)


Ingredients
*Spring onion
*Scotch pepper
*Onion
*Groundnut
*Meat/fish
*Spinach
*Palm oil


Its very simple to make. Finely chop your spring onions and set aside. 
Cook your meat till tender.
In a clean pot add your oil and your chopped or grinded pepper and onions, saute for 2minutes then add your ground nut (grinded). Add your meat stock and cover your pot.
After it starts to boil put your spring onion and spinach, mix them and add your fish/meat. Cover it for another minute and your soup is done.

Note: if the soup is too thick add some meat stock or water.
